The AWESOME Secret for getting Crispy Skin on a Beer Can Chicken
With this technique, I've combined aspects of Aging Chicken with the "Beer Can Chicken" cooking method. Not only do you get the totally AWESOME crispy skin of chicken that has been aged for days, but you also get juicy, moist flavors from using Dr Pepper in the "Beer Can Method" of cooking chicken.
DIRECTIONS:
1 Remove the gizzards from inside of the chicken
2 Place the whole chicken on a wire rack and place inside of the refrigerator for 48 to 72 hours
3 Pull the chicken out of the frig and cover with your choice of seasonings
4 Use your choice of a room temperature can of your favorite soft drink or a beer. Empty the can to the halfway point
5 Place the can in a stand made for beer can chicken and place the stand on a cooking sheet to catch the drippings. Place the chicken upright on the can into the "bottom" of the chicken
6 Preheat your oven to 500 degrees F and remove all but the lowest rack of the oven
7 Place the upright chicken onto the lowest rack of the oven for about 40 minutes. Pull the chicken out of the oven once it reaches an internal temperature above 140 degrees F
8 Let the chicken rest for about 10 to 15 minutes and serve
