The SECRET to making a QUALITY, Cheap meal for around a Buck

Most people would probably think you can have a cheap meal, or a good meal, but not both. WRONG! You can have both a High Quality, Good Tasting meals and do it cheaply. Today's video shows how you can make delicious, tender, juicy pork chops using a Modified Reverse Sear Method of cooking. With the right cooking methods and shopping strategies, Cheap Meals can be Great Meals.

Grocery stores run all kinds of sales. If you shop on Wednesdays, the good cuts of meat from the weekend are still good, but now on sale to make room for the newer cuts. The stores also run loss leaders, including in the meat department to bring in more sales. Sometimes you can find cuts of meat in the "lower grades" of beef with more marbling than what's available in the "better grades". Some of the lesser known cuts can be just as flavorful and tender, but available at a cheaper price. And then there are the cuts that are know for being a little tougher (and cheaper). With the right preparation and cooking style, these too can come out wonderful. With that said, today's video shows how to take the common pork chop, a cut know to be tougher and dry, and make it into something truly desirable, but with a lower cost.

INGREDIENTS:

4 boneless, pork chops

2 teaspoons kosher salt (or 1 teaspoon of table salt)

1 Tablespoon vegetable oil

2 Tablespoons butter, melted

1 Tablespoon unbleached all-purpose flour

1 teaspoon cornstarch

1/4 teaspoon ground black pepper

Optional Topping

2 Tablespoons Orange Marmalade or Cherry Preserves

INSTRUCTIONS:

1 Preheat oven to 275 degrees

2 Using a fork, punch holes about 5 - 6 times in each pork chop, sprinkle with salt evenly

3 Place the pork chops in an 13 X 9 baking dish and let rest for 45 minutes

4 Cover with foil and bake until the internal temperature registers about 140 degrees (about 30 - 40 minutes)

5 Remove from the oven and pat dry

6 Heat oil in a skillet over medium-high heat.

7 Whisk the melted butter, flour, cornstarch and pepper together in a small bowl. Lightly brush the mixture on one side of the pork chops.

8 Place the pork chops with butter mixture side down in the skillet and cook for about 2 - 3 minutes flipping about every minute or so. While the pork chop is browning, brush the remaining butter mixture on the top side of the pork chop. Using tongs, flip the chops. Cook until second side is browned and the pork chop is 160 - 170 degrees.

9 Transfer the pork chops to a large plate and rest while preparing the topping (topping is optional)

10 microwave the orange marmalade for about 15 seconds and brush on the top surface of the pork chop

11 Serve
