Super EASY Puff Pastry Chicken Pot Pie Recipe | Great for Leftovers
This is a great Puff Pastry Chicken Pot Pie recipe to make for tonight or freeze and use later. It's also a super easy recipe that is great for leftovers and can feed a whole family cheaply. Best of all, it can be used as a $5 Costco chicken recipe. So here is my take on "how to make chicken pot pie easy".
Puff Pastry Chicken Potpie
1 pkg (17.3 oz) frozen puff pastry (thawed)
2 lbs. boneless skinless chicken breast, cut into 1 inch pieces
1 tsp salt, divided
1 tsp pepper, divided
4 Tbsp butter, divided
1 large onion, chopped
1/4 tsp dried thyme
1/4 tsp sage
1/2 cup all-purpose flour
1 1/2 cups chicken broth
1 cup half and half cream, divided
2 cups frozen mixed vegetables (about 10 oz)
1 Tbsp lemon juice
1 large egg yolk
Directions
1 Preheat oven to 400 degrees.
On a lightly floured surface, roll each pastry sheet into a 12x10 in. rectangle. Cut 1 sheet crosswise into six 2 in. strips; cut remaining sheet lengthwise into five 2 in. strips.
On a baking sheet, closely weave strips to make a 12x10 in. lattice. Freeze while making filling
2 Toss chicken with 1/2 tsp. each of salt and pepper. In a large skillet, heat 1 Tbsp butter over medium high heat; sauté chicken until browned (5-7 minutes) Remove from pan
3 In the same skillet, heat the remaining butter over medium high heat; sauté onion until tender (5 - 7 minutes) stir in herbs and cook about 1 minute. Stir in the flour until blended (about 1 min) Gradually stir in broth and 1 cup of cream. Bring to boil, stirring constantly; cook and stir until thickened (about 2 minutes)
4 Stir in vegetables, lemon juice, chicken and the remaining salt and pepper, return to boil. Transfer to a greased 2 1/2 qt baking dish; Top with lattice of puff pastry and trim to fit
5 Whisk together the egg yolk and remaining cream; brush over the pastry. Bake, uncovered until bubbly and golden brown. about 45 - 55 minutes. Cover the edges loosely with foil if the pastry starts getting too dark.
Let stand 15 minutes before serving.
