Are you tired of trying to cook boneless, skinless chicken breast at home and having them come out dry, tough and bland? This is a simple recipe that anyone can do to make some of the juiciest, most flavorful chicken breast around.
INGREDIENTS:
4 boneless, skinless chicken breast
2 teaspoons kosher salt (or 1 teaspoon of table salt)
1 Tablespoon vegetable oil
2 Tablespoons butter, melted
1 Tablespoon unbleached all-purpose flour
1 teaspoon cornstarch
1/4 teaspoon ground black pepper
Optional Topping
2 Tablespoons Orange Marmalade
INSTRUCTIONS:
1 Preheat oven to 275 degrees
2 Using a fork, punch holes about 5 - 6 times in the thickest part of the chicken breast, sprinkle with salt evenly
3 Place the chicken breast in an 13 X 9 baking dish and let rest for 45 minutes
4 Cover with foil and bake until thickest part of the breast registers about 145 degrees internal temperature (about 30 - 40 minutes)
5 Remove from the oven and pat dry
6 Heat oil in a 12 inch skillet over medium-high heat.
7 Whisk the melted butter, flour, cornstarch and pepper together in a small bowl. Lightly brush the mixture on one side of the chicken breast.
8 Place the chicken with butter mixture side down in the skillet and cook for about 2 - 3 minutes. While the chicken is browning, brush the remaining butter mixture on the top side of the chicken breast. Using tongs, flip the chicken, reduce heat to medium and cook until second side is browned and the thickest part of the chicken is 160 - 165 degrees.
9 Transfer the chicken breast to a large plate and rest while preparing the topping (topping is optional)
10 microwave the orange marmalade for about 15 seconds and brush on the top surface of the chicken breast
11 Serve
