How Anybody Can Make a Great Reverse Sear Tomahawk Ribeye

Tomahawk steaks are big and can be expensive, so you don't want to mess this up. Hint # 1.....buy them midweek. The steaks that didn't sell over the weekend are still good, but they mark them down....sometimes significantly. Hint #2, using the Reverse Sear method to Pan Sear steak can be a little more forgiving and can make it easier to pull off the Perfect Steak.

DIRECTIONS:

1 In choosing the ribeye steak, find one with the most marbling and the largest cap in the USDA grade you can afford. A better marbled steak in a lower grade may be your best choice.

2 Liberally salt the steak on both sides and let the steak rest at room temperature ( preferable on a wire rack) for between 45 minutes and 4 hours. I wouldn't go longer than 4 hours.

3 After resting, pat the steak dry and finish seasoning to taste

4 If you have a meat thermometer that will go into the oven, place it in the steak now. If you don't, you will want to start checking the steaks internal temperature with an instant read thermometer starting at about 30 minutes.

5 Place the steak in an oven that has been preheated to 250 degrees

6 For Medium Rare, pull the steak out when it reaches an internal temperature of about 120 - 125 degrees ( see chart below for other cooking temperatures)

7 After pulling the steak from the oven, let it rest while you heat up a large skillet or griddle. Put a little high temperature oil ( like olive, avocado or peanut oil) on the surface

8 Place the steak on the griddle and flip after 60 seconds, then flip again every 60 seconds for a total of 4 minutes. After that, sear the edges of the steak briefly.

9 let the steak rest 5 minutes and serve

Internal Temperature Chart for Steak

Rare remove from heat @ 118 degrees for final temperature of 120

Medium Rare remove from heat @ 125 for final temp of 130

Medium remove from heat @ 136 degrees for final temperature of 140

Medium Well remove from heat @ 143 degrees for final temp of 150

Well Done remove from heat @ 154 degrees for final temp of 160
